I don’t know about you, but I love a good crockpot recipe! It’s the easiest way for me to cook a “real” meal with a limited amount of mess and energy. For Sunday lunch last week I made this Cranberry Pork Loin in my crockpot, it was so good. I’ve had the pork loin sitting in my freezer starring at me everytime I go in there so I decided to finally get it out, I also had a can of cranberry sauce left over from Thanksgiving last year (it was still good, like until 2014). I thought I would share the recipe with you all today so you could give it a try.

Grocery List:
– 1 Boneless Pork Loin Roast
{These are great items to stock up on when they go on sale for like $1.97/lb.}
– 1 Can Cranberry Sauce Jelly
– 2 Teaspoons Yellow Mustard
– 2 Tablespoons Brown Sugar
– 2 Tablespoons Corn Starch
– 2 Tablespoons Water
– Salt & Pepper to taste
– 1 Teaspoon Garlic Powder

Start by spraying your crockpot with a non-stick cooking spray really well for easy clean-up. I chose to brown all the sides of my pork loin in a large skillet sprayed with a non-stick spray to give it a nice crust..Next place your whole pork loin in to the crockpot. In a separate bowl combine all the other ingredients {everything} and mix really well. Now pour the cranberry mixture over the pork loin. Making sure it is covering the whole top of the pork loin. Cover and set your crockpot on low for 6-8 hours depending on your crockpot…I’ve had some that cook faster than others. Once it’s done it will most likely just fall apart like ours did.
Serve family style on a platter, take some of the sauce from the crockpot and pour some over the pork loin. You can also thicken it if you’d like with a little bit of a cornstarch slurry mixture…a tablespoon or two of cornstarch mixed with water and then added to the hot sauce liquid should thicken it up. We served ours with butter & herb mashed potatoes, and some green & wax beans that we sauteed with olive oil and garlic. I hope you enjoy it.

The one I make is: 1 Boneless Pork Loin Roast + 1 Can Cranberry Sauce Jelly with fruit + Orange Juice (I fill the empty cranberry sauce can with orange juice and then pour it on top of everything).

I found your recipe on pinterest I had a pork loin i needed to cook today….i used dry mustard, and minced garlic as substitutes for the ingredients that i didn’t have..it still turned out good. I just love cranberries..next time i will try the cranberries and can of oj on my pork loin!
