Carrot Cake mini Cupcakes

I was inspired by one of my favorite blogs a couple days ago {Lolly Jane} to bake some mini cupcakes.  They posted this super yummy recipe for Frosted Pumpkin Spice Cupcakes, and I figured it had been way too long since I have baked mini cupcakes!  Not to mention the fact that they introduced me to the new and AMAZING Cool Whip brand frosting’s!  So yumm-o!  So yesterday I decided to make a batch of mini cupcakes.  I can’t believe it, but this is the first time I’ve ever made Carrot Cake at home!  It’s one of my fav’s too!  And no you don’t have to make them “mini cupcakes” but why wouldn’t you?!  They are the perfect portion control little bites of goodness!  
Shopping List:

–  1 Box Duncan Hines Carrot Cake Mix
–  Oil
–  3 Eggs
–  Walnuts or Pecans
–  Cool Whip Cream Cheese Frosting
–  Mini Cupcake tins or Regular Cupcake tins
–  Cupcake Liners

{ I usually prefer to buy Duncan Hines cake mixes, especially their Red Velvet! }

{ And this frosting is amazing!  It’s not too sweet or heavy, it’s perfect! And it comes in 3 flavors – cream cheese, chocolate, and vanilla.  Would be great with strawberries too! }
Let’s get to baking!  Begin by pre-heating your oven to 350 degrees.  Follow the directions on the box for cake preparation.  I added chopped walnuts to the batter, add as much as you would like.  I added 1/2 cup chopped really well.  I reserved 1/4 cup for the topping.  Once your batter is mixed completely scoop your batter in to the cupcake liners 3/4 way full.  Bake for about 6 – 8 minutes, testing with a toothpick until done.  Let them cool completely before frosting.  You can frost a few different ways…either the simple way with a small cake spatula and just smooth it on, or you can pipe it on.  Either using a large ziplock storage bag with a small tip cut off the corner, or a pastry bag and  your choice of tip…pipe your frosting on your cupcakes.  Top with your remaining chopped walnuts & EAT!!!
