Pork Street Tacos

Pork Street Tacos  We love Mexican food in Casa de Lopez.  When it comes to making Mexican food dishes in our house I usually let the hubby take the lead on them.  The other night for dinner we worked as a team {I did all the prep} and made these Pork Street Tacos.  One of our favorite things to make is tacos, any kind.  Pork is one of my hubby’s favorite meats, so often times when I find it on sale I will stock up.  Carne Asada {beef} is also a popular meat choice for these tacos.  

 
Ingredients:
 
– 3lbs Pork {I used bone-in chops, and cut the meat off the bone}
– 2 Cloves Garlic {pressed or finely diced}
– 1 Large Onion {finely diced}
– 1 Large Bunch of Cilantro {finely chopped}
– 2 to 3 Tbs Oil
– Salt & Pepper
– Corn Tortillas
– 1 to 2 Limes {wedged}
– 1 Can Tomatillo Salsa Verde {optional}
– Shredded Monterey Jack Cheese {Optional}

 1.  Prep your onion and cilantro first, giving them a fine dice.  Set aside in small serving dishes or on a plate.  I also cut some avacado and radishes we had in the house.  
2.  Slice a couple limes in to wedges.  3.  Prep your pork {mine happened to be on the bone, so I needed to cut it off}.  I typically prefer the meat on the bone since it ends up being a little more tender since it’s a darker meat.  Cut your meat in to small pieces, no bigger than 1/2″ cubes.  

4.  In a large skillet over medium-high heat put 2 – 3 Tbs oil depending on how big your skillet is.  Toss in garlic for a quick second, careful not to burn.  Then throw in your pork. Season with salt & pepper.  Continue to cook until pork is fully cooked. Once done plate it in a serving bowl.  

5.  These tacos couldn’t be any simpler.  We used small 4″ corn tortillas, heat your tortillas either on a flat griddle or skillet for a few seconds on each side on medium heat.  Careful not to burn.  Place them in a tortilla warmer or a bowl and cover with tin foil to keep them warm.  

6.  Build your tacos, give them a good squeeze of lime juice and enjoy!

    OH!!! I LOVE me some good Mexican Food. We have Carnita night!! Which actually turns into NIGHT’S because I make so much for left overs. 🙂 You should of put some of these in your bag at SNAP!!! YUM!!! 😉
