Last night for dinner we made it nacho night, so today I thought I would share our tasty nacho experience with you! Not that anyone needs help figuring this recipe out, but I thought I’d share anyway.

Groceries List:
Tortilla Chips
{we prefer Santitas brand, white corn}
Salsa Con Queso Dip
Sour Cream
1 – Can Black Olives
1 – Small Can Green Chilis
1 – Bunch Finely Chopped Green Scallions
1 – Large Finely Diced Tomato
1 – 8 oz. Bag Shredded Cheddar Jack Cheese
2 to 3 – Finely Chopped Grilled Chicken Breast
{you can use any grilled chicken – tenderloins, thighs}
Canned Jalapeno Slices {optional}

Start by lining one large cookie sheet with foil, that way you don’t have to wash it! Next cover the cookie sheet with an even layer of tortilla chips. Use half of your shredded cheese and sprinkle over the layer of chips. Next spoon Salsa con Queso randomly over top the shredded cheese, I just dropped it everywhere so that that most of the chips get a bit of it. Sprinkle half of your grilled chicken over the entire layer. Top with half of your diced tomato and half of your green scallions. Next add half of your sliced black olives, green chilis / and or / jalapeno slices. Now add a second layer of chips, make sure to cover the first layer. And using the rest of your ingredients repeat all the previous steps in the same order. Bake at 350 for about 15 minutes, keep your eyes on the chips that they just toast and not burn. Everything should be warmed up and melted. Top with sour cream and dig in and eat family style at the table!
Variations:
You could use ground beef, or ground turkey for this recipe. Just add a packet of taco seasoning to your meat as it cooks. You could also make this meatless and use refried beans instead.
