Every time I’ve made this Black Bean & Corn Salsa I’ve gotten rave reviews. And it’s really easy to make and tastes awesome. It’s served best with tortilla chips obviously, but the new Artisan Roasted Garlic & Black Bean tortilla chips that are available by Tostito’s are super good and I think would compliment it well.

Black Bean & Corn Salsa
Ingredients:
– 1 Can Black Beans (drained most of the way, don’t rinse)
– 1 Can Corn Kernels (drained)
– 1/2 Cup Finely Diced Red Bell Pepper
– 1/2 Cup Finely Diced Yellow Bell Pepper
– 1/2 Cup Cilantro Finely Diced
– 6 to 8 Green Scallions Finely Diced
– 1 Tomato Finely Diced
– 3 Tbs. Balsamic Vinegar
– 3 Tbs. Lime Juice
– 1 Tsp. Cumin
– 3 Tbs. Lime Juice
– 1 Tsp. Cumin
– 1/2 Tsp. Salt & 1/4 Tsp. Pepper
– 1/2 Tsp. Garlic Powder
Directions:
Start by taking 1/2 can of the black beans, and about 1/4 cup of the corn and either mashed them very well, or put in a small food processor and blend them up good. Add that to the rest of the black beans and corn in a mixing bowl. Add your bell peppers, scallions, cilantro, and tomato’s to the bowl. Add your vinegar and lime juice. Lastly add all the dry seasonings. Stir it all up well, and your ready to eat it! Feel free to add a jalapeno finely diced to the mix if you like a spicy dip. I usually don’t make it spicy, but it would be just as good with a spicy kick I’m sure. This is a great party dip since it doesn’t need refrigeration. Hope you all like it!
